Reheating: You can reheat leftover tequila lime chicken in the microwave at 60% power in small intervals until heated through or in a skillet, covered over low heat, until heated through. Love the recipe cuz I love Margaritas. Just had a problem with not using a grill. Used a grill pan for the oven, but consulted someone on Google for how long to cook and at what temperature. The marinade was wonderful. Used some good Tequila, but the chicken turned out dry. Guess I cooked it too long 40 minutes at 375. Probably should have used a meat thermometer, also. This was delicious and easy just as is. Took a little longer than 2-3 minutes per side for me. Might not have had the grill hot enough or chicken pounded thin enough. Also great with black bean avocado corn salad, which again was perfect as is, though I did half the recipe. I have never had a recipe fail from your website. Thank you as always.

I replaced the tequila with fresh squeezed juice from an orange and also included lime peel strips in the individual sous vide bags I prepared for the chicken breasts. After cooking in the sous vide bag to 150, I returned the bag to the fridge to let the chicken set. After cooling, I cut the chicken into strips and used them as part of skillet fajitas. I made this last night and it was amazing! I made a few little changes that gave it a lot of flavor. I actually baked the chicken in the marinade for 25 minutes at 400. Then I took it out and drained it, added some shredded monteray jack and crushed tortilla chips to the top, and put it back in the oven for another 5 minutes. The chicken was really tender and juicy, and it really absorbed the lime flavor!
Ok, I loved the chicken! However, I was a complete space case while shopping, and when my husband decided to be sweet and do the marinade I realized I had forgotten the oranges and was a lime short. We worked it out with some lemon, some Grand Marnier and a touch of simple.
